Grilled Margherita Pizza
This pizza actually came about by accident. Our oven broke a while ago and I have just not gotten around to getting it fixed. Now that summer is almost here, cooking in the oven is not top priority but we usually have pizza for our weekly movie nights. One Friday night, the husband was at the store picking up ingredients for homemade pizza but since our oven is out of commission and we did not want to disappoint the kids, we decided to make a Grilled Margherita Pizza instead and oh.my.goodness I’m not sure if I’ll ever eat another pizza that isn’t grilled. It was so delicious.
Margherita pizza consists of tomato sauce, mozzarella cheese, basil and tomato. We placed store bought pizza dough onto a Pampered Chef Baking Stone. Then we layered it with sauce, cheese, sliced tomatoes and fresh basil from our garden. Although I love the thick slices of fresh mozzarella cheese, we found that it had too much moisture and made the crust soggy so we chose to use low moisture shredded mozzarella instead.
Place the baking stone on the grill and cook until edges are golden brown.
Delicious!
