The ever popular sweet potato casserole is a staple on many Thanksgiving tables. Although we shouldn’t really worry about calories on Thanksgiving, it’s always good when you can cut a few calories out without skimping on taste. This Skinny Sweet Potato Casserole cuts the calories but still tastes delicious.
I have to admit, I’m not a huge fan of sweet potatoes. But here in the South, you just can’t avoid them during the holidays. What I AM a fan of is desserts and in my opinion a sweet potato casserole is a dessert. It’s one of the only ways that I like sweet potatoes. Cutting the calories a bit by adding a secret ingredient? Now, the pickiest of kids may not be fooled by this. My son won’t TOUCH any type of vegetable except french fries. French fries count as veggies right? I thought I could sneak some carrots into his diet as long as I presented it as a dessert with marshmallows on top. I thought it was totally going to work. I thought I was being so smooth. I thought wrong. He saw right through me and knew something was up. He wouldn’t even touch the marshmallows. It’s his loss though…this is definitely a recipe to be put into our rotation.
