Skinny Sweet Potato Casserole

The ever popular sweet potato casserole is a staple on many Thanksgiving tables. Although we shouldn’t really worry about calories on Thanksgiving, it’s always good when you can cut a few calories out without skimping on taste.  This Skinny Sweet Potato Casserole cuts the calories but still tastes delicious.

I have to admit, I’m not a huge fan of sweet potatoes. But here in the South, you just can’t avoid them during the holidays. What I AM a fan of is desserts and in my opinion a sweet potato casserole is a dessert. It’s one of the only ways that I like sweet potatoes.  Cutting the calories a bit by adding a secret ingredient? Score! Here’s how:

SKINNY SWEET POTATO CASSEROLE RECIPE

Ingredients

  • 4 sweet potatoes peeled and cut into 1 inch pieces
  • 1 bag 1 lb baby carrots cut into 2-3 pieces each
  • 1/2 cup unsweetened vanilla almond milk
  • 2-4 TBS. whipped butter or light trans-fat free tub spread.
  • 1 tsp. ground cinnamon
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 375
  2. Place sweet potatoes or carrots in a large saucepan or pot and cover with 1 inch water.
  3. Bring to a boil, turn down to low and simmer for 15-20 minutes
  4. Drain, return to pan. Heat over medium heat, stirring until water has evaporated, about 2 minutes.
  5. Remove pan from heat. Add milk, butter, and cinnamon and mash until smooth. Use a food processor if necessary
  6. Season with salt and pepper to taste
  7. Transfer mixture to a baking dish. Top with marshmallows and bake for 15-20 minutes until marshmallows are lightly browned.

Just look at all that delicious gooey goodness.  You won’t even miss all the added sugar that doesn’t make it into this recipe.

Serve it up in ramekins for a perfect portion size.

Now, the pickiest of kids may not be fooled by this. My son won’t TOUCH any type of vegetable except french fries. French fries count as veggies right? I thought I could sneak some carrots into his diet as long as I presented it as a dessert with marshmallows on top.  I thought it was totally going to work. I thought I was being so smooth. I thought wrong.  He saw right through me and knew something was up. He wouldn’t even touch the marshmallows. It’s his loss though…this is definitely a recipe to be put into our rotation.
