It’s fall. And your schedule couldn’t get any busier, am I right? In addition to all the current after school activities that your children are in, your youngest son keeps on throwing out ideas of all the other sports he wants to try. Karate, baseball, wrestling. Kids, let me let you in on something. You need to leave some time after school for that thing called dinner. I can’t cart you around for hours upon hours after school. I don’t have time to spend hours in the kitchen. If it’s not a crock pot recipe or a 30 minute meal, I usually don’t cook it. This dish takes 30 minutes or less to make and has so much flavor, even my picky son ate it. And if you’ve ever heard me talk about him before, you know how picky he is. He usually doesn’t like any type of sauce on his meat but he ate this…sauce and all.
I have to confess… I’m not a huge mushroom fan. But I absolutely LOVE Portobello mushrooms. This recipe turned out so good that it is going to be added to our monthly rotation.
Pork loin filet is the perfect meat for any season but especially for fall. It goes well with so many fall flavors.
