Peaches and Cream Popsicles

Popsicles are the epitome of summer. They are frozen fun on a stick. I like making our own popsicles because you can make so many more flavor combinations than what you find in the store. Our most recent flavor combination is Peaches and Cream Popsicles.

Peaches and Cream Popsicles are the perfect traet for a hot summer day!

I know that August is the prime time for peaches but when I saw some at our local produce stand the other day I just had to get them. I also picked up some honey to use as well. These turned out so delicious. I may or may not have slurped down the extra mixture after all the Popsicle molds were full.

Ingredients:
2.5 cups peaches, cut up
1.5 cups vanilla yogurt
5 tablespoons honey
1/4 tsp. vanilla extract

Place peaches in a food processor and purée.

Place the remaining ingredients into the food processor and mix together with the peaches.

Pour mixture into popsicle molds. This mixture is enough to make 8 popsicles. Place molds into freezer and freeze overnight.

When removing popsicles from the molds, dip the molds into a bowl of warm water. Remove from water and turn mold upside down. tap gently on the mold until popsicles slide out. If popsicles are a bit soft, place in plastic bag and refreeze.

I’m not the best at removing popsicles from the molds.  This batch turned out a bit more melty than I wanted.  I prefer to use Dixie cups as mold because I can easily peel away the cup, leaving a perfect popsicle.
