I’m trying desperately to get into the fall spirit here. It never really gets cool enough here for me to consider it real fall.

Fall here means 80 degrees.

It means 20-30 degrees cooler than summer.

It means people bundle up in their skinny jeans, long sleeves, scarves and boots. And sweat because it’s still 80 degrees.

You think I’m kidding but I’m not.

It’s still way too hot for me to be donning any scarf but I can get my fall on by making our home smell all fall-like. That’s why I made this  Instant Pot Apple Butter the other day. The smells that wafts through the house  when this is cooking is just absolutely divine.

I have a confession to make. I have only used my Instant Pot once since I got it last Christmas. And by used it, I mean my husband made a meal in it. I don’t know why I haven’t used it much because it is truly amazing.

There have been so many times when I have a slow cooker meal planned and then I forget to put it in the slow cooker in the morning and then I’m scrambling for dinner plans. The instant pot eliminates all of this. I see a lot more Instant Pot meals in my future. But today I’m not making an entire meal, just delicious apple butter

    1. Hi Cheryl… sugar is completely optional. You don’t have to use it if you don’t want to. I’m not familiar with diabetic sugar so I can’t answer your question fully.
