Easy Family Meal Recipe: Verde Chicken Enchiladas

Things are kind of crazy around here this Fall. With both kids in after-school activities, time is almost non-existent in the evenings. Between homework, soccer and Girl Scouts, I am always looking for an easy family meal recipe to get dinner on the table. So when I find something to make meal prep easier, I am eager to try it. I tried out Kraft Recipe Makers last night and was able to cook a quick family meal that everyone enjoyed. Each Kraft Recipe Makers comes with 2 sauces and 2 recipes and you can find them in the pasta aisle of Walmart. I went back and forth between what to cook: the Sweet and Sour Chicken, Verde Chicken Enchiladas or the New England Pot Roast. I finally settled on the Verde Chicken Enchiladas. As my daughter says… delish!
In addition to the Kraft Recipe Makers meal kit, you will need:
- 1.5 lbs. cooked, shredded chicken (to save time you can buy a rotisserie chicken and shred it)
- 1 cup shredded Mexican cheese
- 10 tortillas
Mix together the chicken and the filling sauce. Spoon the chicken mixture onto a tortilla, roll it up and place seam side down in baking dish
Take it out of the oven, take a deep breath and smell the yummy goodness. Pat yourself on the back and give yourself some props for making a quick, easy family meal that is sure to please even the pickiest of eaters. My son even ate a bit of it and if you know him and his eating habits, that was a huge accomplishment. This was definitely the best easy meal I have made in a while.

YUM- I love making enchiladas! I make a version of this using a red sauce, but I should try out a green sauce- something different!! Thanks for sharing the recipe (and making me hungry)
