Chicken and Avocado Mash Wrap

When summertime hits, I like my meals to be cool and refreshing. This Chicken and Avocado Mash Wrap takes minutes to make and is the perfect meal for hot sweltering days.

This wrap is so delicious.  This is so good that my kids even ate it and that is saying a lot for my picky 5 year old. I love using big lettuce leaves in place of tortillas for wraps.  I was first introduced to this concept at PF Chang’s. Sadly, there are no PF Changs’s where we now live.

Chicken Avocado Mash Up Wrap

Ingredients

  • 1 lb. skinless boneless chicken breast halves flattened to 1/2" thickness (or chicken cutlets)
  • 2 avocados halved pitted, pelled and coarsely mashed
  • 1/2 cup chopped fresh cilantro
  • 2 limes
  • 8 romaine leaves
  • 1/2 cup sour cream
  • 1/2 cup thinly sliced green onions
  • 1 cup grape tomatoes halved
  • crushed tortilla chips

Instructions

  1. Heat pan, coated with non-stick cooking spray over medium high heat. Cook chicken 8-10 minutes or until done, turning halkway through. Remove to a cutting board. Cover, let stand 3 minutes. Thinly slice
  2. In a bowl, combine avocados, cilantro and juice of 1 lime. Spoon equal amounts of avocado mixture onto each lettuce leaf. Top each with chicken.
  3. Halve remaining lime, squeeze over chicken.
  4. Top with sour creram, green onions, tomatoes and tortilla chips

Whenever we have a meal like this, we set it up in a “stations” and everyone can just add whatever ingredients they choose to their wrap. Serve this with a cucumber lemonade spritzer and you have the perfect meal for lunch or dinner.
