Girl Scout Cookies are some of my all time favorite cookies. Did you get a stash this year? What are your favorites? My top two are the Peanut Butter Patties and the Thin Mints. It’s like heaven in a box. Unfortunately the boxes don’t last long in our house. I was able to snag the last few Thin Mints from the box to make a Thin Mint Milkshake.

Look at that yummy goodness! My favorite part is the cookie bits in the milkshake. You can blend yours all smooth but I chose to leave some bits in there.  I used vanilla ice cream but chocolate would work just as well. The more cookies you put in, the minty-er is will be.  Minty-er? More minty? However you want to say it. I can sum it up in one word.. DELISH.

Ingredients

  • 2 cups Vanilla or Chocolate ice cream
  • 1 cup milk
  • 5-6 Thin Mint cookies
  • Whipped cream

Instructions

  1. Place ice cream and milk into blender
  2. Crush up all but one cookie and place in blender
  3. Blend together until you get a creamy consistency
  4. Pour into a glass and top with whipped cream
  5. Garnish with cookie bits and a cookie

This is perfect for a St. Patrick’s Day celebration or just for a little treat for mom. I had mine for breakfast. Don’t judge. But just to be fair, there are two glasses in the freezer waiting for my kids when they come home from school.
