Peanut Butter Oatmeal Chocolate Chip Bars

A few weeks ago, I went looking for a recipe that would make back-to-school mornings easier.  I wanted a grab-and-go breakfast bar that my kids could take in the car if needed.  I decided that oatmeal needed to be a key component but I also wanted to add a bit of sweetness.  I decided to make Peanut Butter Oatmeal Chocolate Chip Bars.  One taste of these and I knew they were not going to work for breakfast but they are oh so good for a snack or dessert! I call that a win.

Peanut Butter Oatmeal Chocolate Chip Bars

Ingredients

  • 1 1/2 c. old fashioned oats
  • 1 1/2 c. all purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. butter softened
  • 1/4 c. smooth peanut butter
  • 1/2 c. granulated sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1 1/2 c. semi sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. Line 13x9 baking pan with aluminum foil
  3. In a large bowl, stir together flour, oats, baking powder and salt
  4. In another bowl, beat butter and peanut butter for 30 seconds
  5. Add both sugars and beat about 3 minutes
  6. Add eggs, one at a time, beating after each one
  7. Add half the flour, mix well and then add the rest, mix well
  8. Stir in chocolate chips
  9. Line baking pan with bough
  10. Bake for 23-26 minutes

These are so delicious and decadent.  I could eat the whole entire pan in one sitting if little hands weren’t grabbing for every last crumb.  Although I probably won’t use these for breakfast (or if I do I would cut the amount of chocolate chips), I will be putting them in my kids’ lunch boxes and offering them for an occasional after school snack.

    My wife is making your cookies as i write this. You need to check your recipe, it says to add BOTH sugars, only white sugar is listed in the ingedients. My wife is adding 1/2 cup of brown sugar and says the dough smells right. You might want to run spell check on it too.
