oh so YUMMY Homemade Chicken Soup

The weather is getting cooler and it’s time to put on the wool socks and cozy up with some nice warm comfort food. As I was meal planning last week, I came across this recipe and it sounded perfect for these chilly days.  I have always been a lover of chicken soup but I have never attempted to make some…until now.

This recipe is quick, easy and the kids will love it too.  
 
Double it for some leftovers for your lunch.

 

Ingredients:
 
1 TBS. vegetable oil
1 lb. boneless, skinless chicken breast
cut up into bite size pieces
1/4 cup all purpose flour
1 medium onion, diced (1/2 cup)
49.5 ready to serve ounces chicken broth
1 cup baby carrots
2 stalks of celery, chopped
1/4 tsp. garlic powder
1 tsp. dried thyme 
1 cup uncooked farfalle pasta

 

Recipe:

1. Heat the oil in a pan over medium heat
 
2. Coat the chicken in flour
 
3. Cook the onion, garlic and chicken for 5 minutes or until the chicken is no longer pink in the center
 
4. Stir in the rest of the ingredients (except pasta)
 
5. Bring to a boil, add pasta.
 
6. Reduce heat and simmer uncovered for 15 minutes or until vegetables and pasta are tender.
