Easter Cake Balls – Perfect for a Beginner!

I am not a baker. I don’t pretend to be one either. My cookies are so-so. I make a mess with fondant. An I yell at cakes. Yes, I yelled at my son’s Star Wars cake at 11:30 pm the night before his party. I’ll just let that soak in a minute.  I yell at cakes. I don’t know why I thought my latest venture into baking would be any different but I did it anyway. I guess it’s not the baking that I have a problem with.  It’s the decorating.  And this time, the unlucky victims were the Easter cake balls.

They look good, right?  They are easy to make which is why I say they are perfect for a beginner. But these didn’t start out as cake balls.  They started out as cake pops. But it only took a minute to realize that the cake pops just weren’t happening.  Here is what I mean.  One big lumpy mess.

Just keeping it real for you. I don’t know why but when I put that lollipop stick in the cake ball, everything went from good to bad in 2 seconds flat.

So I ditched the cake pop idea.  I’ve only made them one other time in my life and I made apples that time.  Maybe apples are more forgiving with the lumps but…

Cake pops no more and on to cake balls. These turned out way better so I’m going to show you how to make them.  I’ll let someone else teach you cake pops because I’m clearly not qualified for THAT.

EASTER CAKE BALLS

Easter Cake Balls

Ingredients

  • 18.25 oz box cake mix
  • 1 can 16 oz store bought frosting
  • 48 oz. candy melts
  • corn syrup
  • sprinkles
  • colored decorating sugar
  • black edible marker
  • paint brush
  • wax paper

Instructions

  1. Bake the cake according to the directions on the box
  2. After the cake has cooled, crumble it into a bowl
  3. Mix in 3/4 of the can of frosting
  4. Roll cake mixture into 1" balls or into egg shapes
  5. Place on cookie sheet and put into fridge for a few hours or in freezer for 15 minutes
  6. Melt the candy melts according to the directions on the package
  7. Do not overheat the candy coating. If it is too thick, add a bit of vegetable oil or shortening to thin it out. Do not add water.
  8. Place the melted candy into a bowl that is at least 3" deep.
  9. Place a cake ball into the bowl, making sure it it fully covered by the candy coating
  10. Lift the cake ball out gently with a spoon
  11. Tap the spoon on the side of the bowl to remove excess candy coating
  12. Place cake ball onto wax paper
  13. When cake balls are dry, decorate.
  14. For chicks:
  15. Use corn syrup to attach sprinkles for the beak, feet and wings
  16. Use the black edible marker to draw 2 eyes
  17. For Easter eggs:
  18. Using the paint brush, paint a design onto the eggs.
  19. Sprinkle the decorating sugar over the corn syrup. Work over a bowl to reuse the sugar
  20. Adhere colored sprinkles to the egg with corn syrup.

These look MUCH better than the cake pops, right? My pops decided to be lumpy. The balls were not.  I’ll just leave it at that.
