25 Days to an Organized Christmas
Today Kirsten from One Tough Mother is back and sharing a delicious holiday recipe.
Hello everyone, I’m Kirsten from One Tough Mother. It’s beginning to look a lot like Christmas friends, and meal planning for all of those family get-togethers is probably on your holiday to-do list! I have a family-favorite recipe to share with you today, and I’m sure your family will love it as much as mine does. My husband’s Aunt Vonna is known for her Cheesy Potatoes – they are requested at every family gathering as a favorite side dish. Ready to make your own?
Aunt Vonna’s Cheesy Potatoes have been a family favorite for years and years, and I finally got the recipe this past summer. It’s so easy it’s ridiculous, but it’s so, so good!
 
  Ingredients:
  • 1 – 2 lb. package frozen diced hash browns, thawed
  • 8 oz. shredded Cheddar cheese
  • 1 can Cream of Chicken soup
  • 16 oz. sour cream
  • 1 1/2 sticks of butter, melted
  • salt to taste
  • Ritz crackers

 

In a large bowl, combine the thawed hash browns and Cheddar cheese.
In a separate bowl, combine the cream of chicken soup, sour cream, melted butter, and salt. Mix until combined.
 
 Add the wet ingredients to the hash brown and cheese mixture and fold together until well blended.
Spray a 13×9 inch pan with baking spray and spread the cheesy potato mixture in the pan. Bake at 350° for about 1 hour, until golden brown on top.
 
Sprinkle the top with crushed Ritz crackers then devour!
 
We, of course, served Aunt Vonna’s Cheesy Potatoes with our Thanksgiving dinner, but you can bet I’ll be making them again for Christmas! They are so good, and shouldn’t just be reserved for special occasions. Cheesy Potatoes are so simple to make, you could whip up a batch over the weekend and serve with several meals throughout the week! Yum! Want to print out the recipe to keep for yourself?
